Sorting / Grading
Finished leaves are sieved by size, which is how grades are assigned.
Dried tea contains everything from large leaf to fine dust. Sorting puts it through sieves of different mesh, and this is where grades such as OP and BOP are decided.
A grade describes size and appearance, not quality. Bigger leaf does not mean better tea.
