Drying / Firing

Heat halts oxidation and brings the leaf down to a keepable moisture level.

Once oxidation has gone as far as intended, hot air brings the moisture down to a few percent. The heat stops the enzymes, so whatever the tea tastes like at that moment is what ends up in the packet.

Under-drying lets quality slip in storage; over-drying blows the aroma away. The tea at this stage is still unsorted, and is graded by leaf size next.
