TEA’s BIBLE

🫖 Taste & brewing

Infused leaf

The opened leaf after brewing — where plucking and processing show themselves.

Infused leaf is the tea after it has opened in water. In tasting it is always examined alongside the liquor and the flavour.

The colour and evenness of the opened leaf show how far oxidation went and how the tea was plucked. Plenty of tough stem and coarse leaf means it was picked well down the shoot.
