Plucking

Plucking is the picking of the leaf. Taking only the bud and the two young leaves below it — 'one bud, two leaves' — is considered fine plucking and gives a more concentrated tea.

Taking coarser leaf yields more volume but brings in tough material and dulls the flavour. What is picked, and how far down, sets the character of the tea.
