Brisk

A lively, mouth-tightening astringency. A tasting term.

Brisk describes a lively, clean astringency that tightens the mouth. It is the opposite of a flat, slack cup.

It is used often of high-grown teas and better Ceylons, and it carries through into the clean finish of a well-made iced tea.
